L'Atelier works on three fronts in Les Estables, in Haute-Loire: restaurant, brasserie and gourmet café. The restaurant claims a Les Estables brand of bistronomy, with a menu it describes as friendly and generous, built around local produce.
Here, homemade goes all the way. The breads, pastries and ice creams are made on site. On this mountain plateau, that is no small detail: it sets the standard.
The nice touch we remember is the restaurant's own beer, LA BURLE, brewed at the foot of the Mézenc. You eat local and you drink local, served at the same table.
