La Flèche d'Argent is the restaurant of the Hôtel Princesse Flore, housed in a late 19th-century building in Royat. The name comes from the nickname of the Mercedes Formula 1 cars of the 1930s: a nod to the nearby Charade circuit.
In the kitchen: Clément Lorente, who arrived in 2018 as pastry chef and became chef in 2020. He works with menus of 4 or 5 courses, with organic vegetables, short supply chains and Mediterranean touches. On the produce side, you come across, for example, foie gras from Limagne, trout from Corrèze or saffron from Mazayes. Gault&Millau gives the restaurant 14.5/20.
Save room for the end: there is a cheese trolley, then a dessert flambéed at the table, as a tribute to the chef's grandmother's Agen prune flan. Book online on the hotel's website.

Top tip
From June to September (period announced for 2026), go up before dinner to the 7th Flore, the seventh-floor rooftop bar of the hotel: 200 m² of covered terrace with a view over Royat and Clermont-Ferrand.
