Our take

Signature cooking that tells the story of the Sancy through its producers and the long time of fermentation, with three Ecotable macarons and two toques in the Gault&Millau 2026.

On the edge of La Bourboule, Thomas Perron's restaurant cooks the Sancy through the seasons, with fermentation as the common thread.

On the road to Saint-Sauves, Thomas Perron cooks with time: in his kitchen, fermentation is at the heart of the plate. He was born in the Massif, into a family that processed produce to make it last: preserves, charcuterie, salting, smoking. Today, he cultivates koji, brews misos and makes amazakes.

Here, 90% of the produce comes from local producers: livestock farmers, market gardeners, freshwater fishermen, cheesemakers, foragers. The menus change with the harvests. Laura Perron puts together the wine and drinks list: more than 200 references, and no industrial soda.

At lunchtime on weekdays, the Plaisir Pressé menu starts at €25 (2026 prices). If you have time, the Voyage en Auvergne and À Fleur de Terre menus (the vegetarian option) come as seven or nine courses, at €70 and €90 in 2026.

Why we love it

  • Home fermentation: koji, miso, amazake
  • 90% local producers
  • More than 200 wines and drinks
  • 3 Ecotable macarons
  • 2 toques and 13.5/20 in the Gault&Millau 2026

Top tip

On Monday lunchtime, only the Plaisir Pressé menu is served (2026 menu). For the nine-course menu, come on Friday evening, Saturday evening or Sunday lunchtime (autumn 2026 hours).
