In the medieval town of Saint-Flour, a bistronomic restaurant run by a local couple, where the local blond lentil gets worked into the cooking.
In the heart of the old town of Saint-Flour, on rue de la Rollandie, Folie des Sens is the restaurant of Marie, Christophe and their team. Christophe Redon runs the kitchen, with a clear approach: fresh, seasonal produce, and everything cooked on site.
The spirit is bistronomic. The menu stays short, with three options, and there are vegetarian dishes. The chef has made a speciality of the Saint-Flour blond lentil, prepared, for example, chili-style with a perfect egg and sweetcorn espuma. The wine list follows the same idea, with wines chosen for their taste.
Budget-wise, the tasting menu runs from €36.50 to €41.50 (2026 prices), and there is also an à la carte menu. Two dining rooms, a terrace, 45 covers in all, and animals are accepted. The restaurant handles its own bookings: to book a table, call the restaurant directly.
