Our take

Buy Cantal AOP at the source, in a cooperative of livestock farmers from the Salers country, which became independent again in 2011. Raw milk, long maturing, and a Cantal made from the milk of Salers cows, the local breed.

  • Wheelchair accessible

Raw-milk Cantal AOP bought at the source, at the Emparrage cheese dairy. A viewing gallery above the workshop and a maturing cellar.

A historic dairy cooperative of the Cantal, founded at Emparrage in the commune of Saint-Bonnet-de-Salers. Speciality raw-milk Cantal AOP (protected designation of origin), from young to old, including a raw-milk Cantal made from the milk of Salers cows, plus fresh tome and a pasteurised-milk Cantal. Direct sales at the cooperative's shop, with a viewing gallery overlooking the production workshop and a maturing cellar. Maturing of 30 to 60 days for the young, 90 to 210 days for the in-between, more than 240 days for the old. Shop open in 2026 Monday to Friday from 09:00 to 12:00 and from 14:00 to 17:00, and on Saturday from 09:00 to 12:00. Closed on Sunday.

Why we love it

  • The gallery above the workshop: in the morning, the cheesemakers work before your eyes
  • Raw-milk Cantal, from young to old, at the cooperative's shop
  • The maturing cellar seen from above, with its fourme cheeses weighing around forty kilos
  • Raw-milk Cantal made from the milk of Salers cows, the local breed

Top tip

Come in the morning: it's the only time the gallery shows you the cheesemakers in the middle of production.

Before you go

  • Closed on Sunday and on Saturday afternoon: come on a weekday or Saturday morning
  • Production can only be seen in the morning from the gallery: come before noon
  • A viewing gallery and a video room explain how it is made before you go to the counter
