Our take

The Salers wheels ageing in the basement cellar, a free self-guided visit, and raw-milk Salers AOP to take away.

Maturing cellar in Salers: Salers AOP ages in the basement, free self-guided visit, tasting area and shop with the five cheese AOPs of Auvergne.

Maturing cellar in the heart of the Cantal mountains, route des Bessades in Salers. The speciality is Salers AOP (protected designation of origin; a raw-milk farmhouse cheese, made from 15 April to 15 November when the cows are on grass; the Tradition Salers label comes exclusively from Salers-breed cows), Cantal Entre-Deux, Cantal Vieux. The self-guided visit, free of charge, goes down to the basement, to the maturing cellar: about 1,000 Salers cheeses age there over 150 m², wiped and turned by the affineur (cheese maturer). Guided visits with tasting are also offered, and the cellar has its tasting area and its shop, with the five cheese AOPs of Auvergne. In 2026, it is open all year, except 1 January, 11 November and 25 December: call for opening days and times.

Why we love it

  • The Salers wheels maturing in the basement, turned by the affineur
  • Young, entre-deux or old Cantal, so you can choose how matured you want it
  • Raw-milk Salers AOP: a seasonality you really notice
  • Buying direct from the affineur, at the cellar counter

Top tip

Go down to see the maturing cellar: the self-guided visit is free. Salers AOP is only made from 15 April to 15 November, when the cows are on grass, and matures for at least three months.

Before you go

  • To taste, go through the tasting area or the guided visit; the self-guided visit itself is free

  • In 2026, the cellar is open all year except 1 January, 11 November and 25 December: call for opening days and times
