Our take

A Clermont company that has made its pâtes de fruits since 1880, and still pours its Pavés Grande Tradition by hand. The Entreprise du Patrimoine Vivant label as a bonus.

A Clermont confectioner since 1880. Auvergne pâtes de fruits (fruit jellies) and candied fruits, sold direct at the factory.

Cruzilles has been making confectionery in Clermont-Ferrand since 1880. The company was born of the merger of three family lines of Clermont confectioners: Gauffridy, Aubert and Jean-Baptiste Cruzilles. In 2026, it holds the Entreprise du Patrimoine Vivant (living heritage company) label.

Auvergne pâtes de fruits (fruit jellies), candied fruits and marrons glacés come out of the Clermont workshop. The signature is the Pavé Grande Tradition: a single fruit purée per flavour, cooked in a copper pan, poured by hand into frames, dried, then cut on a guitar (a wire cutter) and coated in sugar.

For candied fruits, the company works, for example, with strawberry and Auvergne angelica, the Solliès fig or the Corsican clementine. Direct sales at the shop on avenue Jean Mermoz, Monday to Friday.

Why we love it

  • Auvergne pâtes de fruits, made in the Clermont workshop
  • The Pavé Grande Tradition, the company signature: a single fruit purée per flavour
  • Candied fruits and marrons glacés
  • One of the last artisan makers of pâtes de fruits and candied fruits in Auvergne, holder of the Entreprise du Patrimoine Vivant label
