Le Bourbon is eleven rooms and a restaurant in the centre of Yssingeaux, half an hour from Le Puy-en-Velay and three quarters of an hour from Saint-Étienne. A 3-star hotel-restaurant run by Rémy and Mélanie.
What draws people here is above all the cooking. Chef Rémy Michelas works with the terroir of Haute-Loire, between tradition and more contemporary ideas, and the restaurant won a Bib Gourmand in 2016. Several menus, from the daily set menu at lunch on weekdays to longer set menus in the evening.
On the practical side: a bike garage, and negotiated fitness access at Agitaform, right next door (€10 a session). The hotel-restaurant displays the Logis labels (“Cosy” room, “Savoureux” table), Qualité Tourisme and Respirando. Open from Monday evening to Saturday evening.
