Auberge Lou Pinatou

Solignac-sous-Roche, a village in the Haute-Loire set at nearly 800 metres above sea level. This is where Charlotte and Alexandre Roy run Lou Pinatou, a gastronomic restaurant that follows the seasons. The inn was built in 1864, and the couple took over from Charlotte's mother in 2013.

Here, the terroir is the pantry. Every morning, the chefs draw on their huge vegetable garden at the entrance to the village; their orchard, apiary and vines do the rest. They speak of sincere cooking, with honest flavours.

The dining room, redone in 2019, looks out over the Mézenc massif, the Monts du Pilat and the Yssingelais sucs (the local name for volcanic peaks). Bare walls, no music, a few wild flowers on tables made of local ash. You concentrate on the dishes and the wines.

The restaurant won a Michelin Guide Bib Gourmand in 2018, and is in the guide's 2026 selection.
