Le Champ des Vignes

A town-centre restaurant in Aurillac, run by Stanislas Coubetergues. The local lad trained in the dining room and the kitchen in great Parisian palace hotels, the George V, the Bristol, before coming back to set up his pans in the Cantal.

The cooking is seasonal, with fresh produce delivered every day. The chef likes dishes with character and a sense of roots, brought up to date. Depending on the market, you might come across a semi-cooked foie gras or a zander, as the menu moves.

The name (“the field of vines”) doesn't lie, and the cellar lives up to it: a selection drawing on several wine regions, Auvergne, Burgundy, Languedoc, with the service's advice to help you choose.
