Our take
Bistronomy that takes Auvergne produce seriously: AOP (protected designation of origin) green Puy lentils, Auvergne cheeses, chestnut fondant, cooked by chef Maxence Rousseau, Toque d'Auvergne since 2019.
Auvergne bistronomy in the heart of Le Puy-en-Velay: AOP green Puy lentils, chestnut fondant, lunch set menu at €23 in 2026, booking by phone.
Rue Pannessac climbs towards the old town of Le Puy, between old façades and shops. Le Poivrier sits right there, at number 69, and it's the address people pass on when someone wants to eat Auvergne food for real, right in the historic centre.
In the kitchen, Maxence Rousseau makes bistronomy rooted in the terroir. The AOP green Puy lentils come as a salad with smoked duck breast, the foie gras is served with voatsiperifery pepper, the beef comes as a pavé with morel sauce, and you finish on a chestnut fondant or a plate of Auvergne cheeses.
At lunchtime, the set menu is €23 (starter and main, or main and dessert); the Découverte menu is €29.50 (2026 prices). Reservations are taken by phone only: keep that in mind for the weekend.
The chef has a career worth recounting: Institut Paul Bocuse, then the kitchens of Marc Meneau, Paul Bocuse and Pierre Orsi, ten years in Mexico teaching French cooking, and taking over Le Poivrier with his wife in 2018. He has been a Toque d'Auvergne since 2019. Come for the Auvergne produce.
