L'Instantané is Julien Chabert's contemporary bistro, on rue Abbé-Girard, in the gallery district. A native of Lozère, the chef worked at Lasserre and the Plaza Athénée before opening here in September 2015.
His cooking starts from the market and changes with the seasons, based on fresh produce, local where possible. You eat in a vaulted room, with a view of the kitchen and the chef at work.
On the 2026 menu: homemade pâté en croûte, 12-hour braised beef, vanilla crème brûlée, and vegetarian dishes flagged on the menu. The restaurant is in the Michelin Guide selection. In 2026, it is open on weekdays only and closed on Saturday and Sunday.
