A family inn run by the Combourieu family for generations, a kitchen that plays it straight with Cantal produce, and mountains all around.
Pailherols, at over 1,000 metres, a handful of houses between the Monts du Cantal and the Monts d'Aubrac, in the heart of the Parc des Volcans d'Auvergne. This is where, in the centre of the village, the Combourieu family has run the Auberge des Montagnes for five generations: today, the two sisters Marie and Coralie, with Vincent and Stéphane, run the place.
The hotel, a Logis, has 10 quiet rooms with a mountain atmosphere. Next door, La Grange wellness centre has indoor and outdoor pools, a sauna, a hammam and a treatment room, plus a games room for rainy days.
At the table, three warm dining rooms and cooking rooted in the Cantal, led by chef Stéphane Dubois and local producers. A proper gastronomic restaurant, open to non-residents too: in 2026, it serves Wednesday to Sunday, from 5 April to 1 November then from 19 to 31 December, with menus from €40 to €48 (menu of the day at €35, vegetarian menu at €30). Book.
Our take, frankly: the mountain inn as you imagine it, family-run without being stuffy, with real quality on the plate. In 2026, expect €88 to €99 for a double room, and note the dates: the hotel is open from 4 April to 24 October, then from 19 to 31 December. We recommend the place for its restaurant and the spa after a hike.
