The feel of the route
The Noire du Velay: Calm by temperament, the Noire du Velay develops an unmatched maternal instinct. Its behaviour makes it easier to suckle the lambs, which often come from multiple births. Its breeding qualities, linked to the know-how of the breeders, favour the production of vigorous, fast-growing lambs all year round.
Fed on hay and cereal-based rations in addition to their mothers' milk, these lambs are appreciated by consumers for their flavour. The taste and particular grain of this meat are recognised by renowned butchers and restaurateurs. They do not hesitate to showcase the delicious cuts of this traditional meat on their counters or their tables.
The breeders, proud of their breed, therefore organise the Noire du Velay festival every year, around the “Pastre”, during a transhumance that recalls ancestral customs.
